Valentine's Day is right around the corner, and if you're looking for a way to wow your special someone, I've got just the thing. Chocolate truffles are a decadent treat for any valentine, but just imagine your valentine's face when you say that you've made these melt-in-your-mouth masterpieces. You're likely to impress your valentine so much, you'll land yourself a marriage proposal! And the great thing is, they're much easier to make than they look (but we'll keep that between you and me).
Chocolate Mint Truffles from Food Network
12 ounces semisweet chocolate (the best quality you can find) 1 cup heavy cream 1 tablespoon butter pinch of salt 1/2 teaspoon vanilla 1/2 teaspoon mint extract cocoa powder Directions Chop chocolate into small pieces and place in a heat-proof bowl. In a saucepan, bring cream, butter, and salt to a low simmer. Remove from heat and pour over the chocolate. Using a spatula, carefully stir the mixture together until the chocolate is melted entirely and the mixture is smooth. (If necessary, microwave at 20-second intervals until the chocolate is melted.) Whisk in the vanilla and mint extract until smooth and shiny. Pour the mixture into a shallow baking dish, cover, and refrigerate at least 3 hours or overnight. Place a generous amount of cocoa powder into a plastic bag. Using a tablespoon cookie dough scoop to measure, roll ganache into a small ball, then place in the cocoa powder and toss until evenly coated. Repeat until finished. Store truffles in an airtight container in the refrigerator for up to 2 weeks. Yields 18 to 24 truffles. HINT: Get creative with coatings. Crushed cookies, chopped nuts, even shredded coconut makes a great coating.
